Do you remember when you first came to Spain? You’ve probably seen “Russian salad” in any cafe and restaurant, and even in supermarkets in plastic cans, right? They sincerely believe that our native salad is ensalada Rusa exactly. We’ll figure it out! Here is the right recipe:

For the salad we will need:

Potatoes 500 g
Carrots 250 g
Canned green peas 150 g
Chicken eggs 2-3 PCs
Green olives 100 g
Canned tuna 150 g

If you want to make homemade mayonnaise add:

olive oil 250-300 ml
1 piece chicken egg
Hot mustard 1-2 tsp.
Apple vinegar (or lemon juice) 1-3 tbsp
Salt ½ tsp

Cooking ensalada Rusa:

Boil potatoes in peel, as well as carrots and eggs. Cool, clean, cut into cubes, mix in a bowl. Top with peas, finely chopped olives and mashed tuna with a fork (larger pieces), mix. Do not add salt!

To prepare mayonnaise, pour oil into a high glass, add salt, mustard, egg (whole), beat with an immersion blender, without lifting the whisk from the bottom of the glass. After the emulsion is formed, add the acid (vinegar or lemon juice) and mix again. We fill the salad to taste and it’s ready!

The result is such a dense salad, but not even close to the original Russian salad. The main thing is not to overdo it with mayonnaise, as the Spaniards do. Bon Appetit!
