Extra Virgin olive oil -7 tablespoons
Large shrimp – 18 pieces
Garlic – 4 cloves
Parsley – 1 bunch
Cayenne pepper – 1 piece (or 1/4 hot red without seeds)
Juice of a ripe lemon – 2 tablespoons
Salt – large, crystalline, without iodine
- Defrost the shrimps in cold water and then separate the heads from the tails. Whole shrimp tails not peeled from the shell should be prepared as follows: cut the shell with scissors along the entire back to the tail, cut the same along the belly and open the shrimp like a book. Press down to make it flat. Remove the shell and also clean the intestines (black thread along the back of the shrimp), rinse with running water. So you need to prepare all the shrimp tails. After that, they should be put in the refrigerator and stored there while the seasoning is being prepared and the oven is warming up.
- Preparation of aliño dressing. In a mortar, crush the garlic, finely chopped parsley, Cayenne pepper and add a little coarse salt. After the garlic and parsley give the juice, you can remove the crushed pepper so that the aliño is not too spicy. Then you need to add olive oil and lemon juice to the mortar and rub everything together well and mix for 3-5 minutes. After all the ingredients are mixed together when rubbed and the seasoning has become light green, the fragrant Spanish aliño is ready.
- Baking. Heat the oven to 200°C. Spread our open prawns belly up on a baking sheet and pour the dressing of olive oil. After loading them into the oven, you must immediately turn off the lower heating and set a new, lower temperature of 180°And with a cooking time of 5-7 minutes. The smaller the size of the shrimp, the less time they need to be baked. Therefore, it is better to make a taste and readiness test a little earlier than to overdo and over-dry the delicacy dish.
After baking is over, the prawns should be immediately removed from the hot pan and placed on a nice, flat and spacious plate in which they will be served. Also, before serving, you can carefully pour the shrimp strained fragrant juice, which was formed on the baking sheet while they were cooking.
