14 Jun Llampuga fish stew with vegetables

Delicious and healthy recipe from the Balearic Islands.

Fish (mackerel, mackerel, tuna or salmon) – 1.5 kg
Green bell pepper – 2 PCs
Onion – 1 piece
Tomatoes (ground pulp without skin) – 4 PCs
Garlic – 3 cloves
Almonds (peeled, fried) – 150 g
Extra Virgin olive oil – 5 tablespoons
Medium-sized potatoes-5 PCs
Ground paprika – 1 teaspoon
Juice of half a lemon
Parsley (finely chopped) – 1 bunch
Bay leaf – 2 PCs
Salt and pepper to taste
Fish broth (strained) – 1 liter

Fish broth is prepared as follows: take the heads without gills, fins and tails remaining from cutting fish for about half a kilo, wash or soak, at this time we clean onions, celery and carrots. On 1.5 liters of water, put the parts of fish saved for broth, vegetables, cut into large pieces. Cook for 30 minutes at a barely noticeable boil, constantly removing the foam. Add 50 grams of white wine and a little olive oil to the broth 10 minutes after boiling. Constantly remove the foam. Add salt and spices to taste at the end.

Cooking fish:
Tomatoes cut in half and grate on a large grater, discard the skin.
Finely chop the onion.
Peel the pepper from the seeds and cut into large chunks 3-4 cm.
RUB the garlic in a mortar, adding a little salt, then gradually add the almonds, continuing to RUB it and mix with the garlic until smooth.

Strain the broth through a sieve.
We will need ceramic dishes. In it, first slowly heat the vegetables and oil on a low heat, then, when the pan warms up, gradually increasing the heat, bring it to medium, leave it to cook the vegetables, constantly stirring them. After the vegetables are soft and the onion is transparent, put the ground paprika, stir vigorously and immediately pour in the strained broth-1/3 Cup. after 3 minutes, put the mashed tomatoes and simmer until the contents look like sauce. After that, pour in all the broth and put the potatoes in it. It is necessary for this recipe, notching break off to get large chunks. Thus, the potatoes will give more starch and the broth will be thicker when stewing.

Continue stewing the vegetables until the potatoes are done. Then put the garlic dressing with almonds and all the spices, mix gently. Through 3 minutes there from above, on the surface with stewed vegetables, neatly put the pieces of fish skin up, slightly plunging them into the vegetable mass. In this form, simmer for 3-5 minutes (depending on the thickness of the fish pieces). After that, remove the dishes from the fire, pour a little lemon juice over the fish and serve with a sprinkle of parsley.

The Association of cardiologists in Spain recommends eating 3 tablespoons of olive oil daily for heart and vascular health.
Poor eating habits, including eating processed and sugary foods and limited physical activity, are the main drivers of the obesity epidemic, the report says. Of course, we need to allocate more resources to educate the population, to develop habits of eating better and playing sports from childhood, in order to reduce the cost of medical care.
