To cook the mushrooms, you need a wide frying pan with a thick bottom without ribs, so that all the mushrooms are freely spread out on it, for any sauce.

Spicy mushrooms are a very delicious Spanish snack that is sure to be served hot! To do this, you need to follow this cooking sequence:

First you need to prepare the sauce for the mushrooms and transfer it to a deep small bowl. The sauce should be kept hot. Then prepare the mushrooms: remove the entire legs from the mushrooms, wash all the caps well, then dry them thoroughly with a paper towel. Only after that, the mushrooms are prepared and you can fry them. Also put a flat dish next to them, on which you will carefully fill them with hot sauce and immediately serve them on the table.

Ingredients for 4 servings:

Large mushrooms (caps) – 12 PCs.
Garlic – 10 medium cloves, minced
Cayenne pepper Piri-Piri Iberica – 1 PC. (mash the pulp in a mortar)
Dry white wine Iberica 200 ml. (pour evenly into 2 containers for convenience)
Tomato paste – 2 tbsp.
Iberica Extra Virgin olive oil – 3 tbsp.
Parsley – 1 bunch (without stalks, finely cut)
Salt to taste

Preparation:

Pour 2 tablespoons of olive oil into the pan, add the garlic, salt and, stirring constantly, fry over medium heat until slightly Golden. Then, continuing to stir, consistently put: parsley, pour a portion of wine 100 ml, and continue to cook for 5 minutes. Then put the tomato sauce, add the second half of the wine, pepper and continue cooking the sauce until it becomes smooth and slightly thick, stirring constantly. Then transfer the ready-made sauce to a bowl, cover with a lid so that it does not cool down.

All the prepared mushroom caps are greased with a thin layer of olive oil and put on a very hot pan with the hole down and fry for no more than 4 minutes, you can press them very gently. Then turn over and fry for another 4 minutes. Put them in the same position on a warmed dish, put the sauce inside each hat and pour the remaining olive oil on top. Pinchos piсantes in the style of Basque cuisine Piri-Piri mushrooms are ready! You can serve them like this, or you can serve them on white bread, the main thing is not to let them cool down.
