12 Jan Gambas al ajillo
Today, we will cook together traditional Spanish Gambas al ajillo with shrimp or langoustine.
We will need, first of all, earthenware for baking. Then, take the amount of shrimp that will fill it to the brim in one layer. For this recipe, you can take either large shrimp or langoustine. This is the same shrimp, only the hard shell. In the store, select raw langoustine – the boiled ones will turn out to be hard and rubber, and our snack should be tender.
Clean the langoustine from the shell. You should also remove the intestines by making an incision in the back. For small or salad shrimp this is not critical, but for large shrimp is better to remove. Spread them evenly on the board and sprinkle with coarse salt for 10 minutes. Thus, langoustine are salted, and also the salt absorbs excess moisture.
The oven must be preheated in advance to 220 ° C. While the oven is heating, you need to prepare the sauce. Three to five large cloves of garlic should be cut into slices not very finely, otherwise it will burn. Two millimeters thick will be fine. Then, put the garlic in a clay bowl. Immediately pour olive oil to cover it. It is very important to use tasty, fragrant olive oil namely Extra Virgin. With refined, nothing happens – the oil creates an aromatic base here.
While the oil is saturated with aroma, cut the pepper. Determine the amount to your taste. If you have fresh red hot peppers, remove the seeds so that they are not too sharp. Dried cayenne pepper is enough for a couple of pods, grind together with the seeds and add to the garlic. After pepper, do not forget to wash your hands with soap.
Next, place the bowl in the oven for 2-3 minutes until a bright aroma appears. It is necessary to heat the oil to 100 degrees, the garlic should sizzle slightly, but not squirm. We return to our langoustines under the salt. Rinse in cold water, pat dry with a towel and lay them in warm oil in an even layer. Bake for about 10 minutes until cooked. Langoustines (or shrimp) will turn pink, the smell will go stunning. For serving, decorate with chopped parsley and serve to the table in the same bowl with white bread.
