Almogrote is a dish of Spanish cuisine, which is basically a cheese paste with an addition of spices or herbs. Almogrote can be used as a dip to vegetables, spreads on sandwiches, in addition, it is appropriate to add 1-2 spoons of this dish to hot pasta. Traditionally, an almogrot is made from aged goat cheese, but you can use any aged cheese to your taste.

Hard aged cheese – 200 grams;
Olive oil – 100 ml;
Garlic – 2-3 cloves;
Parsley – 1 bunch.

Parsley leaves should be separated from the branches and chopped. Then finely chop the garlic or grate it on a fine grater. Grate cheese or grind in a blender. Add olive oil, carefully grind the mass. You can add a little salt to your taste.
