Canadian scientists have discovered that olive oil helps protect against platelet aggregation, which leads to heart attacks and strokes.

A new study has shown why foods rich in unsaturated fats, such as olive oil, help protect against cardiovascular disease. It turned out that they contribute to an increase in the level of protein, which prevents the formation of blood clots.

Apolipoprotein A-IV, known as ApoA-IV, is a plasma protein that increases after digestion of foods, especially those that are rich in unsaturated fats. Studies have associated higher levels of ApoA-IV with a lower incidence of cardiovascular disease. They also investigated the interaction of ApoA-IV with food. Eating stimulates platelets, which increases the likelihood of their binding to each other or to leukocytes. However, after eating foods containing unsaturated fats, the level of ApoA-IV in the blood rises almost immediately, which reduces platelet binding. It reduces inflammation and the risk of heart attack or stroke.

In addition to the above results, the research team observed that ApoA-IV works in a circadian rhythm. It is more active at night (protects us during sleep), respectively, those who consume olive oil, sleep better.
