Sea Bass 1 pc.
New potatoes 2 pcs.
Garlic 1 clove
Chopped Parsley 2 teaspoons
Extra Virgin Olive Oil 2 tablespoons
Bay leaf 1 piece
For this healthy Mediterranean dish, we will not peel potatoes, but cook them with the peel. Just rinse them well and boil in salted water, it is better if with sea salt. In the meantime, wash the fish, peel, cut along the spine and rinse again. Be sure to salt and pepper it, pour olive oil on each side. Put bay leaf and thyme sprigs on the baking sheet, and fish on top. Then bake it at a temperature of 210 degrees for 15-20 minutes (preheat the oven).
For the garnish of the already boiled potatoes do the following: clean and cut along the garlic. In a heated pan, lightly fry it in olive oil, then add a pinch of dried thyme, parsley and salt. Spices will reveal their flavor when heated. And the resulting mixture of butter and spices is either poured on top of whole potatoes, or mixed with mashed potatoes, as you like. Combine fish with potatoes on a plate in portions and enjoy!
