Have you ever tried to dress oranges in olive oil? Well, in Spain even that is possible! Today we will get you acquainted with an original dish ensalada hurdana in which sweet oranges perfectly get on with a sour lemon, a spicy chorizo sausage and fragrant olive oil.
Traditionally this salad is cooked on Sacred Thursday before Easter and on holidays. However, today it can be found in the menu of restaurants at any day and it is worth trying in different places and to compare.
The classical recipe for 4 persons is as follows:
Get 4 eggs hard-boiled. Meanwhile peel 4 whole oranges and a half of a lemon, slice the pulp. On the heated frying pan prepare some garlic, add 4 pieces of jamón and about 200 gr. of chorizo (it is possible to replace it with smoked Krakow sausage or hunting sausages). Having cooled meat with garlic, add them to fruit, small cut the eggs together with a yolk. Finally mix everything and dress the salad with Extra Virgin olive oil, salt and pepper to taste.
